Chewy oats, tart cranberries, toasted pecans, cinnamon, and creamy nut butter come together in a snack that tastes a little like an oatmeal cookie without requiring any baking.
These simple bites are easy to keep in the refrigerator for busy afternoons, road trips, hikes, or those moments when you need something satisfying between meals.
Ingredients
1 cup quick-cooking oats
1/2 cup creamy almond butter or natural peanut butter, well stirred
1/4 cup pure maple syrup
1/4 cup ground flaxseed
1/3 cup dried cranberries, finely chopped
1/3 cup pecans, finely chopped and lightly toasted if desired
1 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
1 to 2 tablespoons unsweetened plant milk, only if needed
Directions
Place the almond butter or peanut butter, maple syrup, and vanilla in a medium mixing bowl. Stir until smooth and evenly combined.
Add the oats, ground flaxseed, cinnamon, and salt. Stir until the dry ingredients are coated with the nut butter mixture.
Fold in the chopped cranberries and pecans.
Test the mixture by pressing a small amount between your fingers. It should hold together without feeling wet. If it crumbles, add plant milk one teaspoon at a time. If it feels overly sticky, stir in another tablespoon or two of oats.
Cover the bowl and refrigerate the mixture for 20 minutes. Chilling gives the oats and flaxseed time to absorb moisture and makes the bites easier to shape.
Scoop out approximately one rounded tablespoon of the mixture at a time. Roll firmly between your palms to form 16 small balls.
Place the finished bites in a covered container and refrigerate until firm.
Why These Bites Taste So Good
Creamy nut butter and maple syrup give the bites a rich, lightly sweet base. Tart cranberries keep them from tasting overly heavy, while toasted pecans add buttery flavor and crunch.
Cinnamon and vanilla create the warm flavor of an oatmeal cookie, and a small pinch of salt brings everything together.
Finely chopping the cranberries and pecans is important. Smaller pieces distribute the flavors more evenly and help the bites hold their shape.
Why Your Gut Will Love Them
Oats contain soluble fiber, including beta-glucan. Ground flaxseed, cranberries, pecans, and nut butter add other forms of plant fiber and increase the variety of plant foods in the snack.
The combination provides more lasting nourishment than a snack made primarily from refined flour and added sugar.
Other Benefits
Oats provide whole-grain carbohydrates, while nut butter, flaxseed, and pecans add unsaturated fats and some plant protein.
Together, the carbohydrates, fats, protein, and fiber help make one or two bites more satisfying than a piece of candy or a highly refined snack.
Choosing the Nut Butter
Almond butter has a mild flavor that allows the cranberries and pecans to stand out.
Peanut butter is usually more affordable and widely available. It creates a stronger peanut flavor but still works very well with the cranberries and cinnamon.
Choose a creamy variety that is soft and easy to stir. Very dry nut butter may require a little additional plant milk.
Easy Substitutions
Instead of dried cranberries: Use raisins, chopped dried cherries, or finely chopped dried apricots.
Instead of pecans: Use walnuts, almonds, pumpkin seeds, or sunflower seeds.
For a nut-free version: Use sunflower seed butter and replace the pecans with pumpkin or sunflower seeds.
Instead of maple syrup: Use agave nectar or brown rice syrup.
Without ground flaxseed: Replace it with an additional 1/4 cup of quick oats. The bites will contain less fiber but should still hold together.
For certified gluten-free bites: Use oats labeled certified gluten-free.
Optional Flavor Variations
Apple-Cinnamon
Replace the cranberries with finely chopped dried apples and add another 1/4 teaspoon of cinnamon.
Blueberry-Pecan
Use dried blueberries in place of cranberries and add 1 teaspoon of finely grated lemon zest.
Chocolate-Cranberry
Add 2 tablespoons of miniature dairy-free dark chocolate chips. Reduce the cranberries to 1/4 cup.
Serving Size
One or two bites make a practical snack, depending on appetite and activity level. They are nutrient-dense, so they are intended to be enjoyed as small bites rather than eaten like ordinary cookies.
Storage
Store the bites in a covered container in the refrigerator for up to one week.
For longer storage, freeze them in a single layer before transferring them to a freezer-safe container. Freeze for up to two months and allow them to soften for several minutes before eating.
Farmers Market and Grocery Note
Pecans may be available from local growers throughout the Southeast. The remaining ingredients are commonly found in the cereal, baking, dried-fruit, or nut-butter aisles of most grocery stores.
A Gentle Fiber Note
Oats and flaxseed make these bites fiber-rich. Someone who is not accustomed to eating much fiber may want to begin with one bite and drink adequate water throughout the day.
